Cucurbit Farm Recipes

NEW! August, 2010 - MIKE’S BRUSCHETTA

“Bless his little heart. Friend of Cucurbit Farm Mike Savello sends in this terrific recipe for his bruschetta that uses delicious tomatoes from Cucurbit Farm. Don’t be stingy, be sure to share with your friends and family as this recipe makes up to 6 servings. Thanks for sharing Mike!"

Every growing season, we’ll pass along healthy, fun and easy-to-prepare recipes that we love and, more importantly, include ingredients you can find at Cucurbit Farm!

How much fun is that?

From strawberries, tomatoes and squash early in the season to blueberries, raspberries and peaches mid-summer, to corn and apples as the leaves start changing, let us give you a special recipe that takes advantage of the season’s ripest fruits and vegetables.

Each recipe is prepared (and enjoyed) by us before we give it our Cucurbit Farm stamp of approval.

September, 2009 - BUTTERNUT SQUASH AND WHITE BEAN SOUP

“A hearty winter soup that’s sure to warm your insides (and outsides!) on those chilly days. As a bonus, it’s low fat and low calorie, as well as high in fiber and an excellent choice of protein. Serve with Cucurbit Farm’s Fresh French baguettes for a superb winter meal.”

August, 2009 - CUCURBIT FARM GUACAMOLE

“What goes better as a late summer treat than a zesty guacamole? Using homegrown Cucurbit Farm tomatoes, onion, and garlic add a depth of flavor that can’t be beat. Couple with white corn tortilla chips and make it the centerpiece of your hors d'oeuvre platter.”

July, 2009 - LINGUINE WITH TOMATOES, ARTICHOKE AND BASIL

“This dish is the essence of summer. Make the most of it with fresh homegrown tomatoes, basil and garlic from Cucurbit Farm. The fresh basil adds depth and the Brie cheese melts into the linguine to make a subtle sauce.

Use low-carb linguine to make it even more heart healthy.”

June, 2009 - CHOCOLATE CHIP ZUCCHINI BREAD

“Healthy and chocolaty at the same time! Healthy because the applesauce lessens the amount of oil necessary (calorie and fat reduction) and whole-wheat white flour is an overall healthier choice than regular white flour. Great for kids because they’re getting their veggies without realizing it. Great for adults because chocolate chips make the World go ‘round!”
