How much fun is that?
From strawberries, tomatoes and squash early in the season to blueberries, raspberries and peaches mid-summer, to corn and apples as the leaves start changing, let us give you a special recipe that takes advantage of the season’s ripest fruits and vegetables.
Each recipe is prepared (and enjoyed) by us before we give it our Cucurbit Farm stamp of approval.

CHOCOLATE CHIP ZUCCHINI BREAD RED = Cucurbit Farm ingredients
Servings: 4-6 Prep Time: 15 minutes Start to Finish Time: 1 hour 15 minutes
Healthy and chocolaty at the same time! Healthy because the applesauce lessens the amount of oil necessary (calorie and fat reduction) and whole-wheat white flour is an overall healthier choice than regular white flour. Great for kids because they’re getting their veggies without realizing it. Great for adults because
chocolate chips make the World go ‘round!
¾ cup sugar
3 tablespoons Canola Oil
2 large eggs
1 cup applesauce
2 cups whole-wheat white flour
2 tablespoons cocoa powder
1 ¼ teaspoons baking soda
1 teaspoon cinnamon
¼ teaspoon salt
1 ½ cups zucchini – shredded and dried in
paper towels to absorb moisture
½ cup semi sweet chocolate chips
OPTIONAL: ½ cup shredded carrot
Preheat oven to 350 degrees. Please first 3 ingredients in a large bowl; beat with a mixer at low speed until well blended. Stir in applesauce.
Combine flour with next 4 ingredients (through salt), stirring well with a whisk. Add flour mixture to sugar mixture, beating just until moist. Stir in the zucchini and chocolate chips.
Spoon batter into loaf pan coated with cooking spray. Bake for 1 hour or until inserted toothpick comes out clean. Cool in pan for 10 minutes on a wire rack and remove from pan.
