How much fun is that?
From strawberries, tomatoes and squash early in the season to blueberries, raspberries and peaches mid-summer, to corn and apples as the leaves start changing, let us give you a special recipe that takes advantage of the season’s ripest fruits and vegetables.
Each recipe is prepared (and enjoyed) by us before we give it our Cucurbit Farm stamp of approval.

CUCURBIT FARM GUACAMOLE RED = Cucurbit Farm ingredients
Servings: Makes 3 cups
Start-to-Finish Time: 15-20 minutes
What goes better as a late summer treat than a zesty guacamole? Using homegrown Cucurbit Farm tomatoes, onion, and garlic add a depth of flavor that can’t be beat. Couple with white corn tortilla chips and make it the centerpiece of your hors d'oeuvre platter.
3 ripe avocados
3 tablespoons freshly squeezed
lemon juice (1 lemon)
½ cup red onion, diced small (1 small onion)
1 large garlic clove, minced
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 medium tomato, seeded, diced small
OPTIONAL: 8 dashes Tabasco sauce
Cut the avocados in half, remove the pits, and
scoop the flesh out of their shells into a large
bowl. Using a fork, mash the avocados in the
bowl. Immediately add the lemon juice, onion,
garlic, salt, and pepper (and optional Tabasco
if desired) and toss well.
Add the tomatoes. Mix well and add additional salt and pepper to suit taste.
Serve at once and enjoy the fresh offerings from Cucurbit Farm!
NOTE: Put leftovers in an airtight container, pressing a piece of plastic wrap on top of the guacamole before sealing container (prevents browning). Don’t expect any leftovers, however!
